The highest grade rice for sake brewing "Yamadanishiki" from Yamaguchi prefecture and "The water of “Benten pond": one of the 100 elections of Japanese brand-name spring water are married together for making “Ohmine Junmai Daiginjo”. The whole brewing process is done by hands of professional technicians, using the sophisticated additive-free method to lower the alcohol content down to 14%, which is a concentration that is much lower than any other kind of sake. Although uneasy to be convinced with the fact that “Ohmine Junmai Daiginjo” is made of Pure rice, it emits a fruity scent that resembles to Japanese white peach.
