The Pinot Bianco Plötzner from Kellerei St. Pauls was born in one of the most beautiful wine-growing areas in South Tyrol. It is produced exclusively with Pinot Bianco grapes, a vine cultivated in Alto Adige for a century. The grapes are fermented at a controlled temperature in wooden barrels and refined for 5-6 months on fine yeasts. The Plötzner owes its aromatic complexity to the strong temperature variations between day and night and to high-limestone calcareous soils. The nose opens with hints of apple and peach, enriched with hints of apricot and nuances of pear. In the mouth has good acidity and minerality. Perfect as an aperitif, this wine goes well with light pasta dishes and is ideal in combination with fish dishes.
